Whole Wheat Zucchini Carrot Muffins
1 1/2 cups whole wheat flour (other flours would work here too)
2 tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
1/2 cup raw agave nectar or raw honey
1 cup unsweetened applesauce
1 cup total of grated carrot and zucchini
1/4 cup rice milk (or milk of choice)
juice and zest of 1/2 a lemon
**raisins, walnuts or chocolate chips, if desired
Preheat oven to 350. Combine dry ingredients in a large bowl, blend liquid in a separate bowl. Add liquids to dry and stir until completely combined. Pour into prepared muffin tin or cups and bake for 20-25 minutes.
This weekend was Disneyland’s Annual Candlelight Processional. Sara and I opted to watch on Saturday at 5:30.
We got there early to stake out a spot, 3:00 early! It was cold and I endured bad ass kids kicking and knocking into me for 3 and a half hours.
As the sun went down, it was time to light up the Main Street Christmas Tree!! Check it out!
All the waiting was so worth it! Hundreds of choral singers walked in with their candles. All got positioned and the whole show got on the road. Gary Sinise narrated this year. He did a GREAT job. It’s very moving to hear the story of Christmas with live music and choir singers. A definite must see!!

…that making Buffalo “Wangs” was so easy?
In all my Food Network experience, I’ve seen wing recipes that require a multitude of steps. Until, that is, C and I saw an episode of “Best Thing I Ever…Made!” Low and behold it was one of my favorite chefs, Sunny Anderson.
She made these “wangs” for Chef Emeril Lagasse. We fired up the deep fryer and got busy. I must say, we make a great team in the tiny lil’ kitchen. Not at all as sickly sweet as the Neely’s, good gawd I cannot stand all their PDA and small talk!! Anyhow, C did a fab job of separating the drums from the wings and removing the tips. I am not a fan of that job!! After that, I followed the recipe, only to add a bit more lemon juice for tang!!
So tasty! That’s alot coming from me because I am still conquering my aversion to eating meat STILL attached to the bone. I have come a long way though. He’s so proud…
Needless to say, the pad still smells of fry grease and buffalo sauce. A fat kid’s heaven? Hmmmmm, perhaps. Good thing that was all I ate today!! Still under my allotted calories for the day! HA!!
Spring ahead and Fall Back!!
Thanks to the technological advances of 2011, most of my gadgets that tell time “fell back” by themselves.
Sunday, I was not a casualty of any additional sleep or hour gained! However, Sunday night, I fell asleep before 10! Which is unheard of!! When did I wake up, you ask? 5:45 am, entirely TOO early for my taste. C suggested I hit the gym on my first day back on the wagon! Hmmmmph, don’t get crayyyyzy! It was entirely too cozy for all of that!!
We shall see how the time change affects me tonight and tomorrow morning!

Three of my photos made it to the finalist round! Yes it was 3 of about 400, but I was still psyched!
Like I said in a previous post, I participated in Say Cheese LB, a photo contest to mimic a day in the life of Long Beach. The idea was to capture moments of anything within the city limits from Sunday, 10/9 at 1:00 p.m to Monday, 10/10 at 1:00 p.m. Over 100 photographers entered the contest, with an average of 12 photos each. About 400 of the finalists were displayed yesterday on 2nd Street.
Awards and winners were announced at 4:00 p.m. Sadly, I was not one. But it was great volunteering with Justin, taking photos and meeting new people. I will gain more experience and participate next year!!
So, I woke up on a mission to stay on my agenda!! I didn’t get to EVERYTHING, but here’s what I DID do….

Otis has learned to fetch. He never showed any interest in playing with a ball until 2 weeks ago.
At the Seal Beach Dog Park, C threw a tennis ball and Otis brought it back. This went on for about 20 minutes. Because I can’t throw as far as C, I got a “Chuck It”. Kinda like a throwing stick. And I don’t have to get the dirt and slobber on my hands.
He loves it. Sometimes, he gets a tad bit distracted. But for the most part, he does well. Great way to wear him out!!

Beth and I went on an excursion to the Fabric District on a mission to find the specific Sugar Skull fabric (to avoid paying the high price online +shipping and handling) for the liner of my basket. SCORE! The Michael Levine store had just what I wanted. In and out with no fuss!!
I’m no Sewing Maven and I thought maybe my boss would put it all together for me! Yup, her sewing machine is down! Just my luck!!
Wednesday night, I decided to conquer this mutha (shutcho mouth) myself! Mmmhmm, a little bitta no sew fabric glue and an iron and I went to work.
Didn’t turn out EXACTLY how I wanted it but I love it nonetheless!!
I bought the head and tail lights, so now I’m legal to ride at night. No more ridin dirty! Now I just need my valve caps and a couple of stickers and my vision will be complete!!
