Dinner is served…


I wanted something a bit different today. I took to Pinterest to find a new chicken idea.

Balsamic Chicken…hooray!!

Super easy to make, but the glaze made a mess of my cast iron pan. Scrub, scrub, SCRRRRUUBBB!

Oh and those zucchini noodles, or zoodles, are a tasty edition. Just a tad of minced garlic in the pan and toss over medium heat. Voila!

Making healthier choices is easier when you are prepared. I’m ready for tomorrow; lunch and gym bag are packed!

Over the years, I’ve accumulated a handful of recipes. Either pulled out of magazines, cut out of newspapers, shared by friends or photocopied from cookbooks!

I can never seem to keep them altogether. Nor can I find them when I’m looking for them.

So I’ve come up with this…

Emulated after a seasoned fellow cook, that I look up to!

I bought a simple 3-ring binder, with the clear view pocket cover. Created my own cover and filled the binder with sheet protectors. Next, I cut out my recipes and organized them into categories. Finally, I glued them to paper and put them in their respective order in the binder!!

Sara suggested that I scan them into the computer and save them that way. Great idea, but I like the idea of taking the protected recipe out and bringing it to the kitchen, rather than running back and forth to the desktop for the next step.

Hopefully I can keep it up and NOT lose the entire binder! TRAGEDY!!

Holiday Hangover!


Great 4 days spent eating, drinking, cleaning, donating, hanging with the sibs, Disneyland, cruising, watching football, walking, lightweight shopping…

It all caught up to me today! Exhausted by 8:30 and crashed. Woke up an hour later… Still awake…

1. What’s the last thing you spent too much money on?
This morning I bought my EARLY birthday present!! A Jawbone Jambox. Can’ wait for it to arrive!! I’ve been waiting for over a month to buy it. Gotta love my music!!
2. What celeb chef would you want to make you dinner?
I want TWO!! Paula Deen and Guy Fieri! Guy can just hang out while Paula is cookin’, that’ll make it fair!! I’m sure I would gain 10 pounds from her down home south cooking though!! Yummmmmy!!
3. Where do you hide things when visitors pop over or do you let them see the real deal?
In my room and close the door! Some folks can see the clutter, but mostly I stash it!! Yes, it’s true, I suffer from clutter-itis! Sue me!
4. Who is your oldest living family member?
My family is real small! All I have are my brother and sisters and my dad! I don’t know any of my dad’s side of the family! My mom’s immediate family has all passed on! I believe it’s up to me to branch this family tree out! In due time…
5. What is your favorite DQ treat and/or Sonic drink combo (ie: cherry vanilla dr. pepper)
I’ve been to the Sacred Sonic a dozen times and I mostly go for the food!! A friend turned me on to the Cranberry Slush, that is tasty. I’ll stick with burgers and tots!!!

Lookout Weekend!!


After quite a hellish week, the long weekend could not have come soon enough!!

What better way to kick the weekend off than to soak up some Vitamin D at good ol’ Horny Corner? 3 hours and a hot dog later, I’m spent!! No rest for the weary, off to JennJoi’s to run some errands!!

Date Night! Our fave dive bar…Bull Bar! Best Bacon Grilled Cheese Sandwich ever! Great people watching and libations to boot!

Sunday is the Great Cruiser Quest for C!! After visiting a few stores, he decided on a basic, single speed in Flat Army Green! As soon as we get home, he hit the streets pedaling!! A leisurely cruise on down to 2nd Street for lunch.

Monday Funday!!! Why can’t I ever sleep in anymore?? A pleasant surprise…C didn’t go to work! Yaaay, he gets to partake in the Stine Inaugural Fourth of July Bike Ride with Sara!! Rose Park to Shoreline to Queen Mary to 2nd Street (for refreshment, of course) to the Peninsula and ending at 36/36!! Rest stop at home until firework time!! Pedal on down to the Bluffs!! Needless to say, I can’t feel my tailbone today!!

Who votes for the 5th of July to be a paid holiday as well? How did you celebrate your Independence!?

The Fit Dream!


What non-exercise activity do you wish would keep you fit?

How apropos! The Post of the Day fits with my ongoing struggle. This week has been tough. Although, I have re-devoted myself, I lack the drive. Summer is my motivation, but I want quicker results.

I digress, back to the post! I think my honest answer would be 1. Sleep or 2. Drinking Beer.

If you know me, you know I love to sleep. I don’t sleep as much or as often as before, but I still require lots of it. May as well get my sleep on now, while I don’t have any kids. Right?

The last year or so, I have grown to love beer. My palette has expanded and my tastes are more diverse. I enjoy beer with food and can rarely drink it without it. Sadly enough, beer has a lot of “points plus” and I should avoid them. BUT I do not! Perhaps the reason I’m not seeing faster results.

My very OWN Sugar Rush!


Cupcakes, Food Trucks and crafters…oh MY!!

An unknown excursion with my Dad’s wife, Jane!! “Do you want to go to the Sugar Rush with me?” Sure, why not! I agreed, not knowing what it was! So glad I went!

It was a cupcake contest! $5 got me 4 mini cupcakes to taste! I chose White Chocolate Wasabi, Peanut Butter Chocolate (of course!), Banana Split and Pineapple!!

Banana Split and Pineapple were just okay! Kinda dry and nothing to write home about!

Peanut Butter Chocolate was so rich and peanut buttery!! Wished for a glass of milk!!

My absolute favorite was the White Chocolate Wasabi!! Sounds odd, right?! Oh no…so awesome!! A hint of that spicy kick added to the creaminess of the White Chocolate Cake! I had to bring 2 full size cupcakes home to share with C! This and the PB Chocolate were both made by The Blissful Gourmet!!

Two food trucks also came along to celebrate!! The Burnt Truck, which I have never tried before. I still didn’t try, was too full from the cupcakes and….Kogi! Kogi Truck was there, my old favorite!! Was cool to convert a virgin to Kogi!! Jane loved it!!

All for a great cause…Orangewood Childrens Foundation, which helps foster children!

i heart sushi…


As usual, it’s late and we can’t find a place to eat that’s open past 10pm!!

We drive into Seal Beach, but are abruptly stopped for a DUI checkpoint!! Being that Seal Beach has one way in and one way out (besides the freeway), we made a U-turn and came back to the LBC!! Inevitably, we were going to have a few beers!!

We hit up a few sushi spots, all CLOSED!!  Next, we came to an old favorite…Sushi of Naples!! So tasty!!

I am still a sushi novice, but am open to try new things!! I am NOT a fan of the sushi with the fish on the outside.  Perhaps I’ll graduate to that at a later date!! So, we decide on the Crunchy Tempura Shrimp Roll, Caterpillar Roll and 007 Roll. Holy moly, that 007 is spicy tuna, avocado, who knows what else inside! But its wrapped in shredded potatos and flash fried so that the outside is crispy but the inside is still coool!! THE best sushi I have had thusfar!! I am a FAN!

Not to mention, our sushi chef guy, Peter, created that roll!! Most soulful Japanese guy ever!! Loved him!! We will make a return visit soon! Lunch today??
